Short answer: Stardew Valley has split-screen co-op on one farm, added in update 1.5. On PC, PlayStation, Xbox and Switch 2 up to four players share one screen; on the original Nintendo Switch it is limited to two. Every detail below comes from the official Stardew Valley Wiki.
Before you start, the farm needs a cabin for every extra player — without one, nobody can join. On consoles you pick up to three cabins when creating the farm; on PC and Switch 2 up to seven. Then connect a controller for each extra player and choose “Start Local Co-op”. On PC the keyboard always belongs to player one (Stardew Valley Wiki: Multiplayer).
The trap on Switch: one Joy-Con is not enough. Each player needs a full controller — a Pro Controller or a pair of Joy-Cons. So for two players on one Switch you need four Joy-Cons or an extra controller.
